How to prepare steamed matooke (Kubobeza)

Matooke is a special type of plantain grown in the great lakes’ region. The word 'kubobeza' means ''steaming for a long time.''
What you need: matooke, banana leaves (banana leaves are available at Chakula Tamu when in season)
Recipe:
- Peel the matooke. Unlike bananas which are soft, to peel the matooke, use a knife to cut off the ends of the matooke and then slit along the skin.
- Wrap the matooke in banana leaves. With the matooke peeled, wrap it in banana leaves and place it in a cooking pot, on top of banana stalks. The banana leaves are meant to hold the matooke throughout the steaming process.
- Pour some water into the bottom of pot. The stalks help to keep the wrapped matooke above the water.
- Steam the matooke for a couple of hours, pouring water to the bottom of the pot at intervals.
- Cooked matooke is soft and yellow.
- Mash the matooke while it is still wrapped in the leaves.
- Serve when ready and eat with a sauce of your choice: meat, groundnuts, or beans.
