Recipe: Banana Pancakes (Kabalagala)

If you are from East Africa, Uganda to be exact, you know pancakes are not made with eggs, milk and butter, but rather with bananas and cassava flour. Pancakes, also known as kabalagala, are a popular snack in Uganda and here is a quick recipe you can try out:
What you need:
- 500g Cassava flour (Buy Numa Cassava Flour)
- Ripe Bananas (Buy Baby Sweet Bananas)
- 1 tbsp Sugar
- 1/4 tbsp Baking Flour
- 1/2 cup Warm Water
Recipe:
- Peel and mash the ripe bananas in a large bowl.
- Sift the cassava flour, adding to the mashed bananas and mix continuously with water.
- Add the baking flour and sugar and continue to knead and work the dough until it is at the point where it is not sticky.
- Lay the dough on a floured board and roll to about an inch thickness. Cut into circles using a cookie cutter or an ordinary glass/cup.
- Heat vegetable oil in a frying pan and fry the pancakes till they are golden brown.
