Matooke – Uganda’s Beloved Green Bananas
Matooke (also spelled Matoke) is more than just food; it’s a significant part of Ugandan cultural identity and a beloved staple across the East Africa. Cherished by our neighbors in Rwanda, Tanzania, Congo, Kenya, and Burundi, these iconic green bananas are unique because they must be cooked before eating—earning them the name "cooking bananas." Other local names incude: Amatooke, Ekitookye, Ekitooke, Kamatore, Ebitooke, Igitoki.
Matooke is incredibly versatile and nutritious. Once peeled, it can be steamed and/or mashed to create a light-yellow dish that pairs perfectly with sauces and stews such as groundnuts, beef, chicken, beans, peas, fish, goat, and vegetables. It absorbs seasonings and flavors very well, making it an ideal base for traditional dishes like Katogo. Traditionally, matooke is wrapped in banana leaves like Mpombo or Ndagala before steaming to enhance aroma and taste, and to keep it soft.
Naturally rich in complex carbohydrates, fiber, potassium, and vitamin B6, matooke is an excellent energy source and a fantastic addition to gluten-free and plant-based diets. Matooke also has a low Glycemic Index (GI) when prepared traditionally, making it suitable for diabetes management and weight control. Cooked matooke develops resistant starch as it cools, which supports gut health (acting as a prebiotic) and helps regulate blood sugar levels.
Fun Fact: Every part of the matooke tree is utilized in Uganda, from food preparation and beverages to construction, textiles, and art.
