Recipe: How to make yams (mayuni)

The East African diet has a number of favorite go-to starch foods. Yams are one of them. There are more than 100 varieties of yams in the world. We offer the famous yams from Uganda that is purple when cooked. Here is how to make some the Ugandan way:

What you need:

  • 1-2 medium sized yams

Method:

  1. Thoroughly wash the yam with clean water.
  2. Cut the yam into sizeable pieces (according to your preference)
  3. Wrap in banana leaves and place in a saucepan with banana fibres underneath to avoid direct contact with water.
  4. Fill the bottom of the saucepan with water, properly cover it and steam covered for about 1 hour.
  5. Serve ideally when still hot.
